" Creating Kid Approved Vegan foods" 
 We decided to move away from the city where we could garden , breath fresh air, live healthy . We wanted to achevie a more sustainabile lifestyle using solar where we could . We yearned to enjoy nature and protect animals . We desired to be more self sufficient by canning , growing and living to our potential ! Well we started there and expanded as we grew.

We had retired and then found ourselves raising 4  kids again in our old farm house. Being formally educated in science with art and cooking my passion ; I wanted to Share my kid approved and even Omnivore  approved  recipes . (husband is getting to be more vegetarian everyday )  Because our family has a passion for Life, Nature And Love ❤️❤️🌱 By the way Sharing is caring 💭🌱

I tell the the kids we share because we care . We care because we love . We respect , forgive and pray because all these are good . Good thoughts and actions bring Joy... that is how we roll at Green Arcres homestead.

Savory Eggless Hashbrown Crust Quiche

Use vegan butter and grease baking pan (mine is oval about 8x 10 ).Place shredded potatoes on base of casserole sprinkle with onion power and I/2 cup prepared vegan baking mix pour over bake 15 min at 359 let cool . Then Line sides with vegan bacon 
Sauté in olive oil  sweet onions broccoli summer squash and zucchini about 2 cups (I chop up in medium size chunks ) 
Put sautéed veggies on potatoes then pour processed tofu mixture 
In processor put blend till smooth 
one package tofu firm crumbed 
1/2 cup coconut creme 
2 tbsp polenta mixed in 1/2 cup hot water 
1/4 tsp celery salt 
1/4 fresh ground peppers I used mixed peppercorns 
1/4 tsp sea salt , turmeric,black salt,celery seeds, mustard seeds
1 tsp smoked paprika
1/4 cup nutritional yeast   
1cup diced carrots ,cauliflower pearls .shredded potatoes mixed
Garnish with halved cherry tomatoes and baby spinach and grated vegan cheddar back at 350 for 45 mins




 

Spice it up !!
spice mixtures in stores have additive often contain milk , whey and corn starch and things we can't spell or pronounce .

Ranch seasoning and dressing  


1 Cup Dried Minced Onion
1/2 Cup Parsley Flakes
1/4 Cup Salt
2 T Garlic Powder
1/2 tsp celery seeds 
Layer all ingredients into a pint jar. 
 Shake to blend in sealed jar until well mixed. Make sure to shake before each use.
Dressing or dip 
Mix 1 Tablespoon of mix and 1/2 tsp lemon juice per cup of vegan sour cream or vegan mayo or yogurt - it even tasty to add a small slice of mashed avocado . Best  if made ahead time needed so  flavors blend properly. If it’s too strong, add a bit more sauce component .  Make to your taste these are basic guidelines 


If a recipe calls for one ranch packet, use approximately 2 Tablespoons of this mix. You can use more or less depending on your taste of course.


Cajun Spice Blend
2 Tbsp cumin
2 Tbsp coriander
2 Tbsp paprika
1 ½ tsp salt
1 ½ tsp black pepper
Cayenne pepper to taste (you can go as high as you want here—the more you add, the hotter it will be)
1 Tbsp dried oregano
This spice blend is great on grilled chicken, tofu, or even salads.


Greek Spice Blend
1 Tbsp garlic powder
1 Tbsp dried basil
1 Tbsp dried oregano
1 ½ tsp salt
1 ½ tsp pepper
1 ½ tsp dried parsley
1 ½ tsp dried rosemary
1 ½ tsp dried thyme
3/4 tsp ground nutmeg
Use this on Greek salads, when roasting vegetables with olive oil, or in hummus


Pumpkin Pie Spice Blend
1/4 cup ground cinnamon
2 tsp ground ginger
2 tsp nutmeg
2 tsp all spice
1 tsp ground cloves
Some fun uses for this blend are: in oatmeal, on yogurt, or even on a peanut butter sandwich with sliced bananas.
Lemon Pepper
Zest from 3 lemons
2 Tbsp plus 2 tsp black pepper
2 Tbsp salt
This is great on chicken, on salads, or on popcorn


Curry Blend


2 Tbsp cumin powder
2 Tbsp ground coriander
2 Tbsp turmeric
1 ½ tsp ground cardamom
1/2 tsp cinnamon
1/2 tsp cayenne pepper
I’d recommend using this any time you want to give dishes an Indian flair.


Italian Spice Blend
2 Tsbp dried basil
2 Tsbp dried oregano
1 Tsbp dried thyme
1 Tsbp dried rosemary
1 Tsbp garlic powder
1/4 tsp onion powder
1/4 tsp salt
This is perfect for lasagna or pasta dishes—and it even works well on sautéed vegetables with fresh garlic.


Chili Seasoning


2 Tbsp chili powder
1 tsp cumin
1 tsp coriander
1 tsp unsweetened cocoa powder
1/2 tsp garlic powder
1/4 tsp cayenne pepper
1/2 tsp salt
1 tsp regular paprika
1 tsp smoked paprika (or use 2 tsp regular paprika if you can’t find smoked)
This blend is an easy way to spice up chili recipes—or any southwestern dish, really.


Taco Seasoning
2 Tbsp chili powder
2 Tbsp ground cumin
1 ½ tsp onion powder
1 ½ tsp garlic powder
½ tps cayenne pepper
½ tsp black pepper (optional)
½ tsp salt
½ tsp oregano 
In addition to using this for taco meat, you can also mix it into refried beans, use it to flavor enchiladas, or stir it into Greek yogurt as a substitute for a “spicy sour cream.”


Indian Sweet Spice Blend


1 tsp mustard seeds
1/2 tsp cumin seeds
1 tsp Garan Masala 
1/2 tsp turmeric
Salt to taste (no more than 3/4 tsp)
1 tsp ground cumin
1/2 tsp ground coriander
